Quality Seafood Market, writes a monthly article for Live Oak Pharmacy on seafood as an essential part of whole body wellness.
It’s still too hot to fire up that oven. Ceviche (say-VEE-chay) is a great hot weather meal. It requires no heat and very little prep time. What’s more, it’s cool and refreshing! This week, I’d like to share a few pointers that I learned from my fellow fishmonger, Ryan Verheyn of Quality Seafood Market, on how to safely prepare ceviche. Most recipes call for marinating the seafood (fish, shrimp, scallops, octopus, and squid are all popular choices) for 1-5 hours in citric acid (i.e., lime juice) before consumption. The fresher the seafood and the longer it marinates, the more bacteria is killed by the acid and the safer the ceviche is to eat. However, Ryan recommends an even more sanitary method than just selecting a fresh catch and marinating it. Ryan marinates just the seafood, leaving the other ingredients aside, in the citric acid for 5 hours or overnight, if possible. This ensures that the maximum amount of bacteria bites the dust. When he’s ready to serve the ceviche, Ryan drains the seafood, discards the marinade and replenishes it with fresh lime juice. Then he adds his other fresh ingredients, such as diced jalapeño and onion, chopped tomato, and minced garlic and cilantro. The new lime juice has a brighter, fresher flavor, not to mention it’s free of that fishy marinade.
As always, when making ceviche, be sure to buy seafood from a reputable, busy market that is known for its high turnover of product (you don’t want fish that’s been sitting around all week). Also, ask your monger what fish she recommends that day. What’s the freshest? What has the right texture and flavor for ceviche? My personal favorite is black drum. It’s lean, white, and firm. It has a mild flavor and takes to the flavors of other fresh ingredients well. Finally, it’s a local, wild-caught Texas favorite. For some, St. Patrick’s Day (March 17) is a reason to wear green, go to a parade, and drink more Irish whiskey than usual. But just who was this St. Patrick fellow?
The most common belief is that he drove the snakes out of Ireland. Ireland probably never had snakes, though, and the myth may refer to Patrick’s efforts to stamp out the serpent imagery used by the Druids. He also may have used the three-leafed shamrock to illustrate the concept of the Holy Trinity to the people he was trying to convert to Christianity as a missionary in Ireland during the fifth century.
Historians agree that Patrick was born in Roman-occupied Britain, the son of a Christian deacon. At age 16 he was captured and taken to Ireland, where he was a slave for six years. During this time, his Christian faith strengthened, and one day he heard a voice (according to a letter he wrote about his early life) promising he would soon return home. Shortly afterward he escaped, found his way to a ship, and went back to his family.
An angel appeared to him in a dream, he later wrote, telling him to return to Ireland as a missionary. After a long period of religious training, Patrick went back to the land where he had been a slave to convert the Irish and to minister to those Christians living there.
March 17 is believed to be the date of his death. Although never formally canonized, Patrick came to be considered a saint, and March 17 was celebrated as a religious holiday until 1903, when it became a public holiday in Ireland by an act of the British Parliament.

For a more inspired and creative life, here are a few of the values you should live:
- A sense of wonder. Don’t take a cynical, seen-it-all attitude. Pretend you’re a child experiencing everything in life for the first time. Ask questions about the world around you.
- Pursuit of ideas. Don’t hold back. As soon as you feel a spark of interest in something, regardless of how “practical” it seems, let yourself go with it. Follow your ideas wherever they take you.
- Courage. You’ve got to be fearless and not worry about what others may think. Don’t try to be like everyone else. Take your own approach, whatever you’re doing.
- Patience. You can’t hurry creativity, so take time to ponder your ideas. Sit down, relax, have a cup of tea, and think things over. That’s usually how the best ideas bloom.

Although Henri Matisse was nearly 28 years younger than Auguste Renoir, the two great artists were dear friends and frequent companions.
When Renoir was confined to his home during the last decade of his life, Matisse visited him daily. Renoir, almost paralyzed by arthritis, continued to paint in spite of his infirmities.
One day as Matisse watched the elder painter working in his studio, fighting torturous pain with each brush stroke, he blurted out: “Auguste, why do you continue to paint when you are in such agony?”
Renoir answered simply: “The beauty remains; the pain passes.”
And so, almost to his dying day, Renoir put paint to canvas.
One of his most famous paintings, “The Bathers,” was completed just two years before his passing, 14 years after he was stricken by the disabling disease.

A recent post in Time Magazine’s Healthland probes the question on when to medicate a sick child with a fever. “Bottom line: in otherwise healthy children, there’s really no temperature at which you have to treat a fever.” Not sure what’s the best solution for medicating your child? A few tips to keep in mind . . .
- Dosages should be decided according to weight, not age.
- Step away from the kitchen teaspoon; it’s not a reliable way to dispense liquid medication. Live Oak Pharmacy dispenses proper dosage spoons with each liquid medicine.
- If you’re not sure, ask the pharmacist. A pharmacist does more than dispense medicines. They are a valuable resource for understanding the medications you are giving to everyone in your family!

Though the iPad was designed primarily for the consumer market, about 2 million of them have been purchased by companies with 99 or fewer employees. They’re being used for demos, presentations, e-mail, and Internet browsing alongside traditional PCs—not replacing them.
