School of Fish – Say What? Ceviche!

Quality Seafood Market, writes a monthly article for Live Oak Pharmacy on seafood as an essential part of whole body wellness.

It’s still too hot to fire up that oven. Ceviche (say-VEE-chay) is a great hot weather meal. It requires no heat and very little prep time. What’s more, it’s cool and refreshing! This week, I’d like to share a few pointers that I learned from my fellow fishmonger, Ryan Verheyn of Quality Seafood Market, on how to safely prepare ceviche. Most recipes call for marinating the seafood (fish, shrimp, scallops, octopus, and squid are all popular choices) for 1-5 hours in citric acid (i.e., lime juice) before consumption. The fresher the seafood and the longer it marinates, the more bacteria is killed by the acid and the safer the ceviche is to eat. However, Ryan recommends an even more sanitary method than just selecting a fresh catch and marinating it. Ryan marinates just the seafood, leaving the other ingredients aside, in the citric acid for 5 hours or overnight, if possible. This ensures that the maximum amount of bacteria bites the dust. When he’s ready to serve the ceviche, Ryan drains the seafood, discards the marinade and replenishes it with fresh lime juice. Then he adds his other fresh ingredients, such as diced jalapeño and onion, chopped tomato, and minced garlic and cilantro. The new lime juice has a brighter, fresher flavor, not to mention it’s free of that fishy marinade.

As always, when making ceviche, be sure to buy seafood from a reputable, busy market that is known for its high turnover of product (you don’t want fish that’s been sitting around all week). Also, ask your monger what fish she recommends that day. What’s the freshest? What has the right texture and flavor for ceviche? My personal favorite is black drum. It’s lean, white, and firm. It has a mild flavor and takes to the flavors of other fresh ingredients well. Finally, it’s a local, wild-caught Texas favorite. A healthy way to reduce stress

Too much stress is bad for you. Often, a simple attitude adjustment is enough to keep stress in check. And one of the most overlooked attitudes is the attitude of gratitude. If we change our perceptions and reactions to stress-causing events and people, we can live a more serene life. Here are some tips on adopting the attitude of gratitude:

 

  1. Make a list of people, things, and events for which you’re thankful. This can include family, friends, gifts, jobs, vacation, professional accomplishments, etc.
  2. Make a list of why you’re grateful for each of those people, things, and events.
  3. Determine ways in which you can identify more of those people or create more of those situations in your life.
  4. Find ways to acknowledge and show your gratitude. They can include an e-mail, a note of thanks, a visit, a card, etc.
  5. Increase your awareness of common events for which you are grateful, from a sunset to the completion of a minor task or chore.
  6. Be grateful to yourself. If you catch yourself being harder on yourself than others, stop and reframe into the positive.

Most parents can predict the times that their stress levels are high when they’re at home. That’s good, because the key to relieving stress is being aware of your most stressful times, and making some changes to how you deal with tension. ‘You missed work because of . . . what?’

A survey by CareerBuilder.com collected some of employees’ more unusual excuses for missing work. Here are some highlights:

 

  • An employee said his mother had been attacked by a chicken.
  • Another employee reported that his finger had gotten stuck in a bowling ball.
  • An employee simply told the boss he wasn’t feeling too clever that day.
  • An employee said he needed to mow his lawn right away in order to avoid a lawsuit from his homeowner’s association.
  • One employee’s foot got caught in a garbage disposal.
  • The day after Thanksgiving, one employee called in to say she’d burned her mouth on a piece of pumpkin pie

What? I can’t hear you!

It’s a good thing you’re reading this and not listening to it because you may have not heard that Up to one-quarter of college students tested suffered from hearing loss. The culprit may be be due to the use of personal music players such as MP3 players, according to a new study. The ability to learn is directly affected by the ability to hear and a loss of a little as 15 decibels could have an effect.

“Some experts have suggested that increased rates of hearing loss in young adults may be due to the widespread use of personal music players. This study did find that the highest levels of high-frequency hearing loss were in male students who said they used personal music players.”
